1. Pour the juice from the can of chickpeas into a cup.
2. Put the chickpeas into a food processor and add the lemon juice and olive oil.
3. Start blending it. It will be very thick so add a little of the saved chickpea juice.
4. Add two cloves of garlic, a handful of kalamata olives, and a few roasted red peppers.
5. Continue blending. Add more saved chickpea juice until your hummus gets to the perfect consistency
for dipping veggies. (It will stiffen up a little in the refrigerator).
6. Taste the hummus and decide if you want to add more olives, garlic, or red peppers.
7. When it tastes perfect - put it in a container and chill it in refrigerator.
This is really quick and easy to make. It's great with fresh veggies, spread on pita bread, or in place of mayo. on a sandwich.
